Poolside Snacks

The point of having a pool is to enjoy it. Entertaining friends and family around the pool is great fun, so with that in mind, we've pulled a few quick poolside snack recipes. The trick with pool party snacks is keeping things on the lighter side so everyone can keep swimming, and with the heat in mind, you don’t want heavy foods sitting out too long.

Lime coconut ice blocks

These Lime Coconut ice blocks are a creamy-tangy treat that the whole family will love. Easy to make, nourishing and really delicious. Dairy & gluten-free. Slightly sweet. slightly sour - these Lime Coconut ice blocks are a refreshing, yet nourishing treat for a hot day.

Prep time - 5 minutes + freezing time

Ingredients

Serves 6

  • 270 ml canned coconut milk

  • 4 lime/s (½ cup or 120ml) plus zest one lime

  • 60 ml rice malt syrup, honey or maple syrup (¼ cup)

  • 60 ml coconut water (¼ cup) or plain water

  • 1 avocado/s -peeled and stone removed

  • 25 g shredded coconut -toasted

Method

  1. In a powerful blender or food processor, blend all of the ingredients (except the shredded coconut) together until smooth and creamy (about 30 sec, high speed).

  2. Taste and adjust the sweetness to suit.

  3. Sprinkle a little toasted coconut into the base of your ice block moulds, followed by the blended mixture. Add a stick and freeze until solid.

  4. Remove from the moulds to enjoy.

Variations

Fructose friendly
Choose rice malt syrup as your sweetener or sweeten with stevia.
Coconut-free
Replace the coconut milk with full-fat cow or nut milk.
Vegan
Choose rice malt or maple syrup as your sweetener.

BLT Rice Paper Wraps

Poolside Snacks - BLT Rice Paper Rolls

The classic BLT reconstructed and offered in new form in a Summer Roll recipe with Avocado, these are made with only six ingredients and take under 30 minutes... they make for the perfect poolside snack! Plus they're healthy, low carb, paleo, dairy free and gluten free.

Prep time - 25 minutes

Ingredients

Gluten free ∙ Makes 4

  • 8 slices Bacon

  • 1/2 Avocado

  • 4 lettuce

  • 1/2 Tomato

  • 8 tsp Mayonnaise

  • 4 Rice paper wrappers

Preparation

With these BLT Rice Paper wraps, you just have to cook the bacon, chop the other ingredients, wet the rice paper and roll everything up. The rice paper allows for easy eating and it holds everything compactly together, they're also not heavy on the stomach so you won't have to worry too much about indigestion, reflux or stomach aches.


Crisp Cucumber Salsa Dip

Poolside Snacks - Cucumber salsa dip

A light and refreshing Crisp Cucumber Salsa. The perfect salsa for corn chips. Enjoyed best in between dips in the pool, from the poolside lounge or even floating in the pool!

Ingredients

Vegetarian, Gluten free

  • 4 1/2 tsp Coriander

  • 2 cups finely chopped Cucumber

  • 1 finely chopped Garlic Clove

  • 1 finely chopped Jalapeño (optional)

  • 1/4 cup finely chopped Red Onion

  • 2 tablespoons fresh finely chopped Parsley

  • 1/2 cup finely chopped Tomato

  • 1 1/2 tsp Lemon juice

  • 1 1/2 tsp Lime juice

  • 1/4 tsp Salt

  • 1/4 tsp ground Cumin

  • 1 Corn Chips

  • 1/4 cup Sour Cream

Preparation

In a small bowl, combine the first seven ingredients.
In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt.
Pour over cucumber mixture and toss gently to coat. Serve straight away with chips.
